    An improved food modifier comprises a mixture of (a) a phospholipid having a monoacyl glycerophospholipid content of 50 to 90 mol%, and (b) one or more of calcium stearyl lactate, sodium stearyl lactate and sucrose fatty acid ester. The food modifier is mixed with the food before the food form bread and other foodstuffs.
