    It takes ham as raw material, the process includes: pretreating, cutting, extracting broth, mixing, compounding, concentrating, disinfecting, drying, grinding, sieving and packing. The main characters of this invention are as follows: extracting the original broth from lean meat, skin, bone and fat by the methods of cold crushing, cooking under pressure, mixing the extracted original broth, adding compounding materials, fermenting at ambient temp. for improving the taste and adding flavouring. The invention method increases the utilizaiton ratio of raw material while it keeps the original ham taste.
