    The present invention discloses one kind of torulopsosis strain CGMCC No. 1178 and its fermentation process to produce pyruvic acid. Compared with available chemical synthesis process, the process of present invention to produce pyruvic acid has obviously lowered cost, extracting yield as high as 85.8 %, sugar-to-acid conversion rate over 0.62 and few environmental pollution.
