A process for extracting lycopene and beta-carrotene from tomato includes such steps as breaking tomator, dewatering, extracting in polar solution at constant temp. evaporation crystallizing in vacuum to obtain coarse extract, preparing its solution, adsorbing by macroreticular resin, desorbing in desorbent, and evaporation crystallizing. Its advantages are high adsorbing rate, easy desorption, high output rate (more than 62%), and purity (more than 93%), and low cost.
