    the invention discloses a preparing method of sweet fermented rice extract, which comprises the following steps: washing rice; placing rice in the water to immerse for over 5 h; boiling; immersing completely through water; adding 20 g sweet barm for each three kilos of rice; stirring evenly; reserving for 24-36 h between 25 and 30 deg.c to obtain the sweet fermented rice; adding purified water at 1: 1; brewing for 2-5 h; filtering to obtain saccharifying ferment liquid; adding 0.3-0.5 g antioxidant vitamin C in each kilo of saccharifying ferment liquid; obtaining the extracting liquid; reserving in the environment at 0-5 deg.c; controlling saccharifying degree at 4-5 deg.
