    The invention discloses a method useing cassava to directly produce high maltose. It includes the following steps: cassava preprocessing, liquefying, saccharifying, filtering, decolorizing, refining, and condensing. The cassava preprocessing includes smashing, soaking, standing precipitating, separating, and reaping the above for two or more times. This method can simplify the technology, increase cassava flour utilization ratio whose starch can be increased from 90% to about 98%, reduce cost for 300-500RMB per ton, improve end product high maltose quality. Thus the economic benefit is obvious.
