This invention discloses a method for extracting peroxidase from bamboo shoots. The method comprises: adding water to fresh bamboo shoots, crushing, pulverizing, pressing, separating and extracting peroxidase from the filtrate. The method utilizes the acid- and thermal-stability of peroxidase to separate peroxidase from proteins and other substances and obtain crude peroxidase. Peroxidase can combine with Zn2+ to form unstable precipitate, thus can be purified. More than 200 mg peroxidase crystals can be obtained from per kg fresh bamboo shoots. The method is simple and environmentally friendly, and can fully utilize both edible and inedible parts of bamboo shoots. |
