    The invention relates to a candy obtained by crystallizing xylitol and a process for producing the candy. The candy and the process eliminate all the following problems. Candies of this kind are difficult to mass-produce because of the difficult control of crystallization. Even if the crystallization can be controlled by the use of another material in combination with xylitol, the candy deteriorates in the characteristic cool feeling or the product has impaired stability to moisture absorption. The candy contains xylitol and erythritol, the ratio by weight of the xylitol content to the erythritol content being from 99:1 to 80:20, and gives a cool feeling in the mouth. The candy is produced by a candy production process which comprises a melting step in which a mixture containing xylitol and erythritol in a proportion of from 99:1 to 80:20 is heated to melt it, a molding step in which the melt obtained is held at a temperature which is not higher than the melting point of xylitol and at which the flowability is maintained to thereby obtain a fluid in which part or most of the xylitol has been crystallized and this fluid is molded into a desired shape, and a cooling step in which the molding obtained is cooled to room temperature.
